COVELA Avesso Natur is the first Avesso that is not only certified organic, but is also bottled without the addition of sulphites. This is a wine that shows Covela’s continued commitment to innovation and to perfecting the potential of the Avesso variety, native to the granite soils on the banks of the Douro River where Covela is located. This is the farm’s second certified organic wine, following the launch of Covela Avesso Reserva Biol\u00f3gico in 2019. In COVELA Avesso Natur, the sulphites normally used to stabilize the wines were replaced by dried chestnut blossom (Castanea sativa Mill.) harvested from the from Covela’s chestnut trees and prepared by hand by the viticulture and oenology teams.<\/p>\n
We select a small batch of grapes from the lower plot of Campo Fundeiro that ferment and then age in the oldest oak barrels, in an attempt to replicate the most traditional winemaking methods in the region. The oenology team aged the wine, followed by racking and bottling without filtration, respecting the dates established in the lunar calendar.
